Story

Opened in 1997 and first awarded a Michelin star in 2003, Number One offers modern dining coupled with world class Scottish hospitality. 

Number One retains one Michelin star and 4 AA Rosettes. The restaurant was also named Restaurant of the Year in the 2020 CIS Excellence Awards, in partnership with Caterer.com.

Designed by Rocco Forte Hotels’ Director of Design, Olga Polizzi, the rich red lacquered walls in Number One are adorned by art in the form of a large format triptych print of a Scottish oak tree by Adam Ellis and artwork from the Royal College of Art in London. Standout design elements include striking dove grey wool banquettes with golden yellow leather accents, elegant Lyndon Albany chairs with distinctive button backs and solid timber oak flooring throughout the restaurant.

  • Head Chef Mathew Sherry

    Head Chef Mathew Sherry creates seasonal Scottish dishes by combining classic flavours with modern flair. Edinburgh born Mathew joined Number One from his previous roles as Head Chef of Michelin-starred Northcote, Lancashire and Sous Chef of Castle Terrace, Edinburgh. Chef Mathew and our team at Number One currently showcase favourite produce through a seasonal 7 course menu.

  • Front of House Emma Lonie & Sarah Dalgleish

    Restaurant Manager Emma Lonie and Deputy Restaurant Manager Sarah Dalgleish, oversee the front of house operations at Number One. Together with their team, Emma and Sarah's passion in creating the best dining experience is displayed through the true Scottish hospitality delivered to each diner.
