GOURMET CULINARY REVOLUTION AT ‘LE JARDIN DE RUSSIE’ RESTAURANT
The Restaurant of the Hotel de Russie, 'Le Jardin de Russie' is patronized by hotel guests and more and more by the demanding roman clientele who recognize the high cuisine standards achieved.
Since February 2008 ‘Le Jardin de Russie’ Restaurant has an illustrious Director of Food, Fulvio Pierangelini, one of the most celebrated chef in the world.
Fulvio Pierangelini needs no introduction, he embodies the true gourmet cultural revolution at ‘Le Jardin de Russie’ Restaurant. Cultured, sophisticated, although he has experienced various culinary fashions, is the 'soloist of great Italian cooking', as he was described in an interview for the Gambero Rosso.
Executive Chef Nazzareno Menghini works alongside Chef Fulvio Pierangelini in order to offer customers the highest level of service and an exquisitely refined cuisine.
During the summer season, ‘Le Jardin de Russie’ Restaurant is opened outdoors and tables are laid in the Hotel’s Secret Garden, designed by Giuseppe Valadier, where it is possible to taste marvellous dishes under ancient trees and old roses.
The British 'Restaurant Magazine' rated Fulvio Pierangelini the twelfth best chef in the world and he is undoubtedly the symbol of Italian cuisine. A cuisine made of genius and passion, a talent that remains a craft. His cooking produces every day new and unique dishes, a master’s hand that dialogues with ingredients.
His dishes are simple and Fulvio Pierangelini often confirms: “I prefer preparing food through a series of easily identifiable operations, that express themselves in all their transparency. This doesn’t mean making food without research, but having made simplicity the primary purpose of that research.”
Fulvio Pierangelini, is of Roman origin, but trained and practised in Tuscany. He has been described as a ‘food whisperer’, able to conjure magic out of the simplest and most familiar ingredients – seafood, fish, vegetables – and combining and presenting them in new and inventive ways whilst remaining true to Italian tradition. His signature dish is the much-imitated Passatina di Ceci e Gamberi (purée of garbanzo beans with shrimp), but he is also famous for having included pasta with tomato sauce on the menu at Il Gambero Rosso, to prove that Michelin-starred food need not be complicated and fussy.
