NEW OPENING AT THE CHARLES HOTEL IN MUNICH

In April 2016, Sophia’s Restaurant & Bar will opened its doors on Sophienstraße. Sophia’s is a restaurant, a bar and a cosy lounge, next to the Old Botanical Garden in the centre of Munich. The new botanical bistronomy is all about gastronomic excellence and refined food in a comfortable and relaxed setting, in Munich, for the people of Munich. Sophia’s also introduces a newly created cocktail bar, the entrance of which is just to the right of The Charles Hotel.

Former Michelin starred chef, Michael Hüsken, heads up the kitchen team. Michael has experience in some of Germany’s most well regarded restaurants, including Lafer’s Stromburg, Käfer’s, Acquarello, Schloss Elmau, Geisels Werneckhof and Reisers am Stein. His new menu for Sophia’s stresses the importance of regional and seasonal products, with some guest appearances from more exotic flavours and ingredients. Though the highest quality meats and freshest fish are also available from his specialist butcher and fishermen, vegetables, fruits, spices and herbs take centre stage. Guests will find dishes like beetroot, ricotta, cumin with iced pumpernickel; char with soubise and sweet and sour onions; and duck breast, with carrot ginger purée, wild broccoli and tamarind jus.

The bar menu continues in the botanical theme, with well balanced and imaginative drinks created by Bar Manager Roman Kern. Roman re-invents the classics by mixing natural essences, drying fruit and vegetables, creating powders out of liqueurs, freezing herbs and pickling spices. Cocktails such as Sage Smash, Thyme Plane, Earl Pepper or Cucumber Fizz can be enjoyed to the sound of a rotating program of well-known DJs and talented musicians.

The sophisticated cuisine and cocktails are delivered in a charming and informal setting. Guests of Sophia’s can enjoy long weekend breakfasts, afternoon snacks, a quick lunch, or a celebratory dinner. During the warmer months, homemade lemonades and fresh fruit cocktails are offered on the terrace with a view of the Old Botanical Garden, and in Munich’s snow-strewn winter, a seat by the open fireplace in the lounge area to the side of the bar, is a warming spot to enjoy our warm, brandy punch or a late-night digestif.

Olga Polizzi, the award winning Director of Design for Rocco Forte Hotels, led the design team on this project redesigning the restaurant, formerly Davvero. She has developed an ambience through the architecture which is generous and light, with a high ceiling that contributes to the bright and airy atmosphere. Two large fig trees in the centre of the restaurant, and other plants and herbs in rustic pots, mirror the lush restaurant terrace and the gardens beyond.

The bar area is connected to the light-filled restaurant, but boasts a subtler lighting, darker design, and more masculine fabrics. The space features a striking and contemporary eight-metre bar and the Moroccan-inspired interior décor of the lounge space creates a feeling of intimacy and privacy.

Michael Hüsken says: “I try to cook food which is spontaneous, individual and personal. I want my guests to enjoy surprising and gastronomic food, presented simply and delivered with warm and easy hospitality. We cook with our usual high standards, but do not only serve our guests the filet that is found on many menus, but also other often tastier pieces of the meat as a shoulder, neck or belly. And of course fresh herbs and vegetables will play a significant role.”
