London, April 2016: Brown’s Hotel in London, a Rocco Forte Hotel, has collaborated with Madeleine Shaw, British chef, nutritional health coach, yoga teacher and bestselling author of ‘Get The Glow’, to create an innovative and delicious Rocco Forte Nourish menu for its guests. Rocco Forte Nourish, one element of Rocco Forte Hotels’ newly launched all-encompassing wellness offering, inspires healthy routines and encourages guests to keep wellbeing front of mind while travelling.

Madeleine Shaw has worked closely with Lydia and Irene Forte and the team of talented chefs and mixologists at Brown’s Hotel to develop and design the Rocco Forte Nourish menus exclusive to the London property. From 5th April 2016, there will be a range of breakfast dishes in HIX Mayfair, as well as a full and diverse healthy menu available in The English Tea Room, the Donovan Bar and for those who order from the In Room Dining menu.  There will also be a selection of healthier cocktails in The Donovan Bar. 

When speaking of the collaboration and her involvement in Brown’s Hotel’s Rocco Forte Nourish menus, Madeleine said: “I'm so thrilled to be creating a range of healthy meals for Brown's Hotel! Naturally people want to spoil themselves when they visit luxurious hotels but they don't realise that treating yourself doesn't have to mean eating lots of unhealthy food. Hopefully my dishes will feel both spoiling and good for you so you can indulge without the guilt! I'm particularly excited about the in-room dining which I hope will satisfy those jet lag cravings with something nutritious!”

The Madeleine Shaw for Rocco Forte Nourish menu at Brown’s Hotel includes:


Acai Bowl with toasted buckwheat granola, banana and fresh berries


Kale and cumin shashushka 


Pure Magic Bowl: Honey roasted chicken and chickpeas, harissa spiced carrots, flaked almonds, pomegranate wild rice, roasted aubergine, and creamy hummus


50 Shades of Green Bowl: Quinoa burger, avocado, tahini dressing and pumpkin seed pesto, courgetti and miso kale salad 


Superfood Energy Balls:  Goji; Cinnamon & raisin; Dates, cashew & coconut; Almond & raw chocolate


Crudités and Rainbow Dips: Almond & butterbean dip, tamari spiced carrot & cumin dip, pea & cashew dip, with crudités 


Chocolate Cherry Fudge and Coconut Ice-Cream: Raw cacao and almond butter fudge served with dairy-free coconut ice cream


Raspberry and White Chocolate Cheesecake: Raw cashew and raspberry cheesecake with a date and pecan crust



Green Machine: Rice Milk, Spinach, Maca, Mango & Avocado


Chocoholic:  Almond Milk, Raw Cacao, Banana, Almond Butter, Cinnamon & Chia Seeds

In addition to the food offering, Madeleine Shaw has developed a range of healthier cocktails. To create a cocktail that isn’t loaded with sugar takes time, consideration and innovation. Bringing together Madeleine’s understanding of ingredients and their beneficial properties and The Donovan Bar Manager Giovanni Cassino’s knowledge and creativity, a selection of delicious healthy alternatives to cocktail classics, both alcoholic and non-alcoholic, was created.

The cocktail menu features Blueberry & Rosemary Sling, Coconut Punch, Earl Grey Hot Toddy, Elderflower Sour and Bloody Negroni. Key ingredients include blueberries, full of antioxidants; lemon juice to alkalize the stomach; pineapple for its anti-inflammatory and digestive properties; coconut water for vital vitamins and minerals; and egg white to provide a dose of high quality protein. The Naughty Corner in The Donovan Bar will certainly feel less devious with one of Madeleine’s cocktails in hand!
