The art of aperitivo with Giovanni Usai

Born in Turin in 1786 and embraced by the terrazze of Milan, the cherished ritual of aperitivo finds a new rhythm at the Bocconi Terrace. Designed in the style of a classic Milanese garden, where nature and the city meet,  it is here that Sommelier Giovanni Usai guides guests in discovering the perfect pairings to enjoy this summer.

We often think of aperitivo as synonymous with spritzes—bright, orange-hued, bittersweet and sparkling—but there’s more to the ritual than what’s in the glass. As Giovanni explains, "In my opinion, wine fits perfectly into the sociable and relaxed atmosphere of aperitivo on the Bocconi Terrace. Just like the lighter cocktails typical of a Milanese aperitivo, certain wines can offer an equally refreshing and palate-awakening experience.”

Whilst the tradition of aperitivo is rooted in light, appetite-stimulating drinks enjoyed alongside small plates and easy conversation, for Giovanni, wine can fit into this social moment just as naturally. “White wines like Grillo bring freshness, citrus notes, and minerality that stimulate the palate, making them ideal to pair with small bites or enjoy on their own," he says. "Even a dry, fruity rosé such as a Nerello Mascalese from Etna can strike the right balance between approachability and complexity."

At its core, it’s a ritual about connection—a chance to unwind and share the moment. “Ultimately, wine contributes not only through its flavour but also through its convivial and shared nature, encouraging conversation and enhancing the moment."

When it comes to selecting the right wines for guests visiting the Terrace this summer, there are a few key characteristics which Giovanni looks out for that suit both the warmer weather and the laid-back, al fresco setting. "I look for wines that are light, refreshing, and not too high in alcohol. Acidity is important because it keeps the wine lively and thirst-quenching. Ripe fruit and intense aromas help maintain a pleasant and continuous sip," he explains. "Ultimately, the wine should enhance the relaxed atmosphere of outdoor life, be easy to drink, and versatile with food."

Alongside refreshing spritzes and summer wines, the Terrace at Bocconi also serves a seasonal menu of light Italian dishes—simple, unfussy plates that let fresh ingredients shine, 

such as the Tomato and Basil Lasagna with ricotta and Parmigiano. "A perfect pairing for this dish is definitely our Nero d'Avola," Giovanni says. "The wine's freshness and fruity notes complement it beautifully, balancing the acidity of the tomato and the savoury richness of the cheeses."
