Edinburgh born Mathew joined Number One from his previous roles as Head Chef of Michelin-starred Northcote, Lancashire and Sous Chef of Castle Terrace, Edinburgh.
The team includes Emma Hemy, a winner of Hotel Restaurant Manager of the Year in 2021 who oversees the front of house operations at Number One. Number One was named in the prestigious La Liste 2022, in their listing of the world best restaurants.
