Fulvio Pierangelini uses traditional Roman ingredients mixing the freshest produce for a unique gastronomic journey. Throughout the day, the menu at ‘Da Sistina’ features fresh, seasonal and locally sourced ingredients that capture the history and evolution of Roman cuisine.
Puntarelle salad, lentils soup with shellfish, and the pumpkin cream with chestnuts and ginger celebrate the humble ingredients typical of the cucina povera, “simple cuisine” whereas artichokes, cauliflowers, and chicory reflect the countryside’s rich variety of fresh herbs and vegetables.
In paying tribute to Roman tradition, classics such as spaghetti al pomodoro, ravioli alla carbonara, and codfish with chickpeas and mint are recreated in Pierangelini style.
