What was the vision behind Aquazzura opening their very first bar here in Rome?
Federico Pavan (FP): We wanted to create a relaxed yet beautiful space to enjoy the finest expression of agave spirits in Rome. Aquazzura is a brand synonymous with exceptional quality, and the bar had to reflect that. Our space is intimate–just a few tables, with a maximum of 36 guests. Instead of filling the bar with spirits, we meticulously chose those that are a perfect fit. We believe we have one of the finest collections of agave spirits in Italy, a truly thoughtful selection that complements the Aquazzura brand.
Tequila is increasingly celebrated as a sophisticated choice for sipping. What qualities do you look for in a good bottle?
Mattia Capezzuoli (MC): A good tequila should have a smooth, balanced taste with a clean finish without being overly fiery or bitter, and a complexity that develops as you sip it. The agave should be sweet and earthy, with hints of citrus, pepper, and sometimes even floral notes. The production process also matters—tequila made from 100% blue agave, rather than a mixture of agave and other sugars, will have a more authentic and refined taste. A well-aged tequila, like Reposado or Añejo, should offer richer flavours, such as oak, vanilla, and caramel, while retaining the distinctive agave character.
FP: With tequila, it's often the reverse of other spirits such as whisky. While aged tequilas–Reposados and Añejos–are approachable and smoother, making them ideal for someone new to agave, those who truly love tequila often go for Blanco. Blanco is unaged, so it doesn't get structure or flavour from a barrel. Instead, you taste the pure agave spirit, all the flavours that the plant itself gives. When you age it, it becomes smoother and more approachable, but the raw material is what aficionados seek.
