Behind Florio’s Wine List

When we picture an authentic Italian meal, it's often the generous antipasti, handmade pasta and that first coffee-soaked bite of tiramisù that come to mind. Yet la dolce vita begins just as much with what's in the glass. At Florio, our wine list reflects the same values found throughout our kitchen. Here, Head Sommelier and F&B Operations Manager Martin Zieglmeier shares his philosophy behind the list - from what he looks for in a producer to the storied regions he loves to champion.

Choosing Wines with Character

"When we add a new producer, we're looking for wines that reflect the passion of the people behind them, and leave a lasting impression," Martin explains. "We seek out winemakers who remain true to their region, native grape varieties and heritage, while also adapting to the changing realities of nature through sustainable or biodynamic farming and minimal intervention."

It's an approach that naturally favours producers whose wines tell the story of where they come from. Alongside Italy's great names, including Antinori and G.D. Vajra, are pioneering estates such as Walter Massa, Duemani and Villa Bucci - winemakers who have reshaped perceptions of their regions and shown just how expressive indigenous grape varieties can be.

Beyond Italy's Best-Known Vineyards

While Tuscany and Piedmont remain cornerstones of the list, Martin is equally passionate about introducing guests to Italy's lesser-known wine regions. One he believes deserves greater attention is Sicily's Etna.

"The volcanic soils, high-altitude vineyards and dramatic temperature differences create wines with remarkable freshness, elegance and mineral character," he says. "It's a region where tradition and innovation come together, making it a fascinating discovery for anyone looking to explore a different side of Italian wine."

A Matter of Balance

For Martin, a great pairing should always complement, rather than compete. "We want the wine to enhance the food, never overpower it. Because Florio's cooking is honest, ingredient-driven Italian cuisine, we look for wines with freshness, balance and a strong sense of place."

One pairing he returns to time and again is the Sole Meunière alongside Girolamo Russo's 2024 Rosso "'A Rina", served lightly chilled. The wine's vibrant acidity, delicate red fruit and signature Etna minerality bring freshness to the buttery richness of the dish - an example of how food and wine can elevate one another while allowing each to shine.
