"My vision of sustainability in food is simple: I believe in celebrating seasonal, local produce, especially fruits and vegetables.
We need to highlight that nature is the true artist and that cooking is a social act. 
Nowadays, a chef has the duty to leave the kitchen and become a spokesperson for farmers, cheesemakers, fishermen, and all the people who enable us to convey emotions through our food by providing us with the finest ingredients."

Gutshof Polting

Located in Lower Bavaria, Gutshof Polting has been a family-owned estate for over five generations. Established in 1899, it is renowned for its dedication to ethical animal husbandry and sustainability, with particular attention to agriculture, pond and forestry management, and traditional sheep farming. Gutshof Polting regularly supply us with quality meat and fish including corn-fed poulards, lamb, kid, veal loin & fillet, as well as char & salmon trout.

Frische Paradies, Munich, Germany

Situated in Munich’s historic district, Frische Paradies is renowned for its premium selection of fresh fish, meats, wines, fruits, and vegetables, as well as delicacies like caviar and truffles. Our close relationship ensures exceptionally quick delivery, with products ordered in the morning arriving by the afternoon, allowing our chefs to work with ingredients at their peak. Their commitment to quality makes them an indispensable part of our restaurant.

Tölzer Kasladen

For over 50 years, Tölzer Kasladen has been a beacon of cheese craftsmanship, specialising in artisanal varieties from across Europe. Each cheese is meticulously matured in their own ageing rooms and sourced from select dairy farms, ensuring the highest quality while preserving the rich traditions of cheese-making. We trust Tölzer Kasladen for our Italian cheese selection, including varieties like Rocchetta, Camembert di Bufala, Taleggio, Fontina, Gorgonzola, and Clock Cabernet di Merlot.

Honest Catch, Germany

Honest Catch are innovators within the seafood community, combining sustainability with exceptional quality. They are best known for responsibly breeding their own Bavarian shrimp, prized for their freshness and delicate, slightly sweet taste. We use these shrimp, alongside Gambero Rosso, in our carpaccio — both favourites among chefs. Honest Catch’s dedication to transparency and traceable aquaculture ensures seafood that is not only delicious but consciously sourced.

Back Geschwister, Germany

Back Geschwister are celebrated for their outstanding sourdough, a beloved staple at The Charles Hotel. Their loaves are crafted using time-honoured methods, natural fermentation, and the highest-quality ingredients, resulting in bread with exceptional depth of flavour. Trusted by many of Germany’s top chefs, Back Geschwister delivers with remarkable freshness, bringing craftsmanship and care from their bakery directly to our table each day.

Kochstoff, Germany

Kochstoff provides hand-selected, high-quality ingredients sourced directly from trusted producers across Europe. With a focus on exceptional goods, they are a preferred partner for chefs seeking ingredients that elevate their dishes. From seafood sourced directly from French fishermen to premium items from the Paris wholesale market, Kochstoff’s dedication to quality and traceability ensures consistently outstanding produce for our kitchen.

Genuss Imkerei Dombrowski

Genuss Imkerei Dombrowski offers high-quality, artisanal honey through sustainable and ethical beekeeping practices. With a strong commitment to protecting bee health and preserving natural habitats, they create honey celebrated for its purity and distinctive character, whilst their thoughtful approach results in authentic flavours that reflect the landscape.

Van Nahmen

Founded as a Rhineland apple butter operation in 1917, Van Nahmen was the first to start making fruit juices. For more than 100 years and still today,  orchard owners from the Lower Rhine and nearby Münsterland regions commission them to press their apples into juices. If the quantities have increased, the quality has remained unchanged. Still owned by the original family, they are producing our delicious juices.
