"My vision of sustainability in food is simple: I believe in celebrating seasonal, local produce, especially fruits and vegetables.
We need to highlight that nature is the true artist and that cooking is a social act. 
Nowadays, a chef has the duty to leave the kitchen and become a spokesperson for farmers, cheesemakers, fishermen, and all the people who enable us to convey emotions through our food by providing us with the finest ingredients."
