Exclusively from cocktail maestro Salvatore Calabrese, this bold but refreshing cocktail will make a statement at your seasonal soirées. With aromatic apple notes and the kick of classic Genever, Agent Simon is one cool customer.

INGREDIENTS

35ml Rutte Old Simon Genever

20ml Maley Cristiallier apple Vermouth

5ml Bénédictine

2 dashes bitters

5ml apple cider vinegar

Cedar wood essence or lemon peel

METHOD

1) Load up a mixing glass with ice, add all the ingredients and stir well until chilled.

2) Strain and pour into a chilled Martini glass, garnish with a strawberry.
