In Conversation with Jesus and Abigail

In a revealing (and rare) five-minute break, the highly regarded duo share how they add a sprinkling of magic to the ​​contemporary restaurant serving unique British dishes at Brown’s.

Jesus, name the one ingredient a successful restaurant needs?

Jesus: “Over the years, I’ve learnt that the personal approach is crucial when creating a very successful restaurant and naturally this is what I want to do here at Charlie’s. That friendly familiarity and the menu are both fundamentally important to what customers need and want.”

Abigail, congratulations on your recent award, how did you win?

Abigail: “Thank you. The team at Charlie’s is everything to me – I think of them as my second family, it's them who make me want to excel. Everything we do, we do for each other. At the competition, an intensive day of testing in front of a panel of leading industry professionals, I was shaking all over. Before going into the main auditorium I lay on the floor to try and calm my thoughts. Apparently, it helped!”

You both make people feel so welcomed, what’s your secret? 

Jesus: “When customers are sitting at the table, you have to watch their body language to anticipate what they want before they even ask for it. Keep smiling and always keep an eye on the service and table allocation, especially at lunch time. Most importantly, treat guests as though they are your family and a friend.”

Abigail: “This is something I’ve always loved about hospitality but Jesus has really brought it home. I truly believe that is one of the main reasons guests keep returning through that door.”

What does good teamwork look like?

Jesus: “We understand each other as we have the same shared passion for hospitality, it is in our blood.”

Abigail: “For me, it’s all about laughter, efficiency and gliding along a lake like swans – no one sees your feet paddling 100 miles an hour underneath the water.”

What are your future plans for Charlie’s?

Jesus: “We will have more ‘power tables’, the teal blue banquettes circling around tables to create booths for guests looking for a little more privacy and discrete conversation. However, no matter what our guests prefer, every table will be special and my aim is for Charlie’s to be the best restaurant in Mayfair.”

Abigail: “The rest of our plans for the restaurant are top secret, so you’ll have to come and see for yourself throughout the months that pass.”
