Hotel Amigo’s Bar Manager Hassan Guilich shares his journey to practicing the art of mixology and why surrealism is his everyday reality at Bar Magritte...

Stepping into Bar Magritte is an instant sensory salute to its eponym, Belgian Surrealist René Magritte. How do the bar’s different elements come together to enrich this experience?

Bar Magritte truly embodies a unique place where we aspire to capture the creative and avant-garde spirit of the eponymous artist. Every detail, from the decor to the drinks to the lighting and ambiance, is meticulously designed to create an immersive and inspiring atmosphere. Our goal is for every customer to feel transported to another world as soon as they step through our door, and it's a mission we strive to achieve every day, with passion.

What first inspired you to pursue a career in bar management?

My journey in the hospitality industry began twenty years ago, as a beach boy at a charming beach bar in Casablanca. This experience was a true revelation for me. I had the privilege of working at the heart of the summer buzz, on the warm sand and under the blazing sun. The opportunity deeply enriched me, offering me the chance to cultivate my passion for mixology and customer service.

 

What initially turned my attention towards a career in bar management was the prospect of designing unique experiences for customers and sharing my passion for beverages with them. Thanks to this passion, I had the chance to travel and work in several countries, including Turkey, Mauritius, France, Senegal, and Guadeloupe.

What is your creative process when designing a new cocktail?

It’s truly diverse. Sometimes, an idea for a theme or ingredient emerges first, and then I build the cocktail around that inspiration. Other times, I'm motivated by a specific colour or flavour that I want to incorporate. Ultimately, it's a fusion of these diverse elements and memories that gives birth to a distinctive and exquisite cocktail.

Can you share any memorable reactions to your drinks from guests?

I have had the privilege of experiencing many memorable reactions from customers tasting my creations, but one of them particularly stands out in my memory. A customer, initially just coming to enjoy a glass of wine, was convinced by my suggestion to create a custom cocktail for him. At his first taste, he simply closed his eyes, savouring each sip with delight. This gratifying experience attests to the appreciation of my work and encourages me to continue creating unique experiences for our customers. Interestingly, he faithfully returned every Saturday to enjoy the same cocktail, highlighting the lasting impact of this experience on him.

What is your favourite drink to prepare for people?

Among all the drinks I prepare, my favourite remains the classic Old Fashioned. I appreciate the balance between the bitterness of Angostura and bourbon, and the sweetness of sugar. This classic drink always wins approval, and I enjoy preparing it with particular attention.
